Ivan Choultse was born in St. Petersburg to a family of German origin named Schultze. He trained under Krighitsky. At the time of the Russian Revolution he escaped to Paris where he adopted the French transliteration of his name, Choultse. Although he never returned to Russia, his work was recognised there during his lifetime.

Choultse exhibited at the Paris Salon in 1923 and 1924. Today his paintings can be found in many Russian Museums. There are also four paintings by Choultse at Hillwood, Washington DC which is perhaps the most representative collection of Russian decorative arts outside the former Soviet Union.
